We use a lot of coconut milk in our house and it gets pretty expensive. The average price of a can of coconut milk is about $2.00. And then there is the concerns over BPA in the cans and the guar gum that's usually added.
A few days ago I decided to do some investigating to see if there was a way to bring this cost down. Low and behold- I found out it's super easy to make your own coconut milk using shredded coconut and water. Shredded coconut is significantly cheaper than canned coconut milk.
Here's what you do:
Combine 1 cup shredded unsweetened dried coconut and 3 cups hot water in a blender. Blend for about 2 minutes or until it looks nice and creamy and you have a good froth on top. There will still be a few small pieces of coconut. They don't bother me so I just leave them in but you can strain them out if your chose.
That's it. You now have coconut milk. It does seem a little thinner to me than what you buy in the can but for how much money you save by making it yourself, I think it's a great deal.
Because there are no stabilizers added the fat will separate if left to sit. Just shake it to mix it all back together. Keeps for about 4-5 days in the refrigerator.
