Here's a yummy recipe that's easy on your wallet. Only $3.71 per serving. This recipe makes three servings. Prices are for organic and grass fed ingredients priced at my local co-op.
1 Tbs coconut oil
1 lb ground beef ($5.99)
1 can diced tomatoes ($1.99)
1/2 yellow onion diced. (.38 cents)
2 cloves garlic (.10 cents)
1 Tbs chili powder
1 tsp chipotle powder
1 tsp dried oregano
1 tsp dried cumin
1 tsp sea salt
Dash of black pepper
1 cup bone broth
1 avocados, cubed (.99 cents)
1 bunch cilantro, chopped ($1.69)
To prepare the chili start with a large pot. Heat the coconut oil then add the ground beef. Brown the beef then add onion and garlic and cook for an additional 2 minutes. Add spices and mix well with the beef mixture. Next add the can of tomatoes with the liquid and the broth. Stir and bring to a boil. Reduce heat to a simmer. Cover and let simmer for 30 minutes stiring occasionally. Spoon into bowls and top generously with avocado and cilantro. Enjoy!
If you would rather not use canned tomatoes you can use diced fresh tomatoes and some more bone broth. Home canned tomatoes are also a good option.
I didn't price the oil and dried spices as these would only be a few cents and you probably already have them in your cupboard. If you do need to buy a dried spice check your grocer for bulk section as it will be much less expensive than buying by the jar. I also did not price the broth as you hopefully have some on hand from the last time you had bones. Instructions on how to make bone broth can be found here. You can also used boxed broth or water.
Total cost for this meal is $11.14
divided by three servings equals $3.71/serving!
