Sunny Pumkin Cookies With Awesome Pictures

If your like me the kids are always begging you for treats (and driving you batty!) Since I don't have a photo of what this looks like I decided to draw some awesome pictures:




In case its not obvious those shoes I'm wearing are the Vibram Fivefingers. Of course.


My son is allergic to almonds and eggs so it's been difficult to find recipes for primal baked goods that will work for us.  However we were able to come up with what we call "Sunny Pumpkin Cookies." They are a variation on the Nutty Cookies from Everyday Paleo which is based on almond butter. We used sunbutter, added pumpkin and made a few other changes. Here they are:



Sunny Pumpkin Cookies
  • 1 cup canned pumpkin
  • 2 Tbs honey
  • 1/2 cup coconut flour
  • 3/4 cup sunbutter. We like this one because it's not sweetened. 
  • 1/2 tsp baking soda
  • 1 apple finely chopped
  • 1/3 cup coconut milk
  • 1 1/2 Tbs pumpkin pie spice 
  • 1/2 cup dark chocolate chips
Preheat oven to 350 degrees. In a mixing bowl combine all the ingredients and mix well. Place a sheet of parchment paper over a cookie sheet and spoon heaping tablespoons of the mix onto the parchment paper about an inch apart. I've also used a hot pizza stone with no parchment paper and the cookie turnout awesome that way as well. Bake for 25 minutes. Makes approximately 24 cookies.

    Just found your website/blog on Primal Toad's site. I am excited to see someone just like me!! I am a mom of two with one more on the way due in December!! My two boys are 4 & 16 mo!! My family went Primal/Paleo after my second pregnancy when I was diagnosed with Gestational Diabetes! We learned a lot about low carb eating then and my husband started doing more research because we were always interested in a Whole Foods, clean food lifestyle. So we put the low carb clean food thing together and found the Primal Blueprint by Mark Sisson and The Paleo Solution by Rob Wolfe!! Changed our lives over a year ago!! In fact I truly believe that eating this way and living this way made it possible for me to conceive my third child on the first try!! Previously I was a Weight Watchers lifer and it took 6 months and two miscarriages to conceive my second son!
